A fatty acid is composed of hydrocarbon chains and carboxylic acid groups, forming a crucial component of lipids. The length and saturation rates of the hydrocarbon chains vary among different fatty acids, influencing the physical properties of lipids, such as their melting point and fluidity. Additionally, fatty acids contribute to the hydrophobic nature of lipids, making them insoluble in water. Endocannabinoid compounds are derived from omega fatty acids and play a vital role in binding to cannabinoid receptors CB1 and CB2, as well as other specific binding sites.
